A BAKER from Burnham-on-Sea's dream has become a reality as she is set to open her first bakery.
Eloise Baker, founder of Ellie Bakes, will sell her baked goods along with a range of other treats at the former Haverslice unit in Berrow.
She told the Weekly News that after years of supporting each other, George from Haverslice said she could take over the pizza business's former venue since they have recently relocated to Unit 17 on Westmans Trading Estate in Burnham-on-Sea.
Ellie, 23, who has lived in Burnham her whole life, said: "This is perfect, this is what I’ve dreamed of having.
“I felt like I’d struck gold.”
The young baker founded her business in the first Covid lockdown in 2020, and started off making cupcakes, before becoming renowned for her brilliant birthday cakes.
She said having her own bakery still seemed like 'a distant dream' even after she returned from travelling the globe to restart her business in October 2023.
Ellie hopes to have the new shop, named Ellie's, open around the Easter weekend, and is currently working around the clock to get the venue ready in time, alongside also running Ellie Bakes, which will continue to operate in tandem with the new bakery.
She explained how George from Haverslice has been 'really supporting' her, and helping her with the business aspect of having her own shop.
On Facebook, the local pizza business posted: "So great to be teaming up with Ellie’s.
"We’re here for you all the way and wish you the best of luck with all our support.
"It seems absolutely right for local businesses to work together so we are so pleased to help you in your adventures!
"I can’t wait to be the first customer!"
Although specialising in her trademark buttermilk drip birthday cakes, Ellie has branched out to other baked goods such as traybakes, brownies, and cookies to serve at the new shop.
The venue will serve as a base for Ellie, and will sell her baked treats along with coffee and hot drinks - she also has plans to serve bread from a local baker.
“I’m trying to keep it all local," she said.
“It’s a location for me to bake from, sell from.
"This will gave me a base to grow from.”
Speaking on her loyal client base, Ellie said: "I'm just forever grateful for their continued support.
“Without them, I wouldn’t be able to have my dream.”
