A BAKER from Burnham-on-Sea has had her dream become a reality after opening her first bakery in Berrow last month.

Eloise Baker, founder of Ellie Bakes, opened her new shop, Ellie's, on Thursday, March 28, at the unit formerly occupied by Haverslice in Berrow, at 247a Berrow Road.

"I still have times it doesn’t feel real," she said, a month on from first opening.

"The occasional pinch me moment when I open up in the mornings.

"It is exhausting but I love every second of it."

Despite the overwhelming reception so far, Ellie has no plans to slow down, and continues to look for ways to progress and improve her offering.

"I’ll always be bringing out new cakes of different varieties," Ellie said.

"Kinder millionaire and cookie pies have been requested.

"I’ll switch up the sandwich fillings and am taking note of what people are asking for in regards to the savoury options."Burnham and Highbridge Weekly News: Fresh bread is a hit with customers.Fresh bread is a hit with customers. (Image: Ellie's)

When asked about what customers have been enjoying most so far, Ellie explained: "All the cake options - particularly the Mars Bar Slice.

"I have people messaging to reserve, and if I sell out when people come in, the look of disappointment!"

At her new bakery, Ellie has been serving a range of pastries, cakes and traybakes, drinks, sandwiches, and fresh bread from Maisey's and Astills.

When she first learned she would be taking on the former Haverslice premises, Ellie explained how the owner of the pizza business had been 'really supporting' her, and helping her with the business aspect of running her own shop.Burnham and Highbridge Weekly News: Baguettes on offer at Ellie's.Baguettes on offer at Ellie's. On Facebook, the local pizza business posted: "So great to be teaming up with Ellie’s.

"We’re here for you all the way and wish you the best of luck with all our support.

"It seems absolutely right for local businesses to work together so we are so pleased to help you in your adventures!"
